Nomé Izakaya (Toronto)


When a coworker suggested meeting at Nomé Izakaya for a team get together, it was a brilliant recommendation. After all, in Japan, an izakaya is often the place where groups meet after work for small plates and rounds of drinks before heading home. It’s an environment that you can be loud and getting things to share is a must.

After sampling two of their salmon rolls, I found them so similar that it’s difficult to distinguish between. Both the apple salmon roll ($19.80) and the seared salmon roll ($20.80) are encased in the fish with cucumber, avocado, asparagus, and crab meat salad on the centre. Where the difference lies are a few ingredients: the apple salmon including julienned apple and onion, while the seared salmon features cream cheese, coleslaw, and a host of other condiments. Both were freshly made, stuffed with fillings, and potentially the seared salmon having a slight edge with the plethora of sauces used to add interest.

For those who are squeamish about raw fish, Nomé Izakaya’s extensive menu offers tons of cooked dishes. Their chicken wings ($14.80 for a lb) were a hit with a shatteringly crispy crust and juicy interior having been wet-brined in soy sauce-based marinade. They were flavourful enough naked, but a hit of the spicy honey garlic made it even better.

The Japa-burgers ($17.80 for 3; extra piece for $5.90) are akin to a smashed burger slider with tomato, lettuce, onion, barbeque sauce, and a garlic mayonnaise. Interestingly, they toast the bottom of the bun so it resists getting soggy – I like it crispier so this was perfect for me, but I can see those who like a super soft bun finding this to be a drag.

While the sliders were delicious, there wasn’t really anything “Japanese” about them. I would have liked a more pronounce sauce (perhaps subbing teriyaki for the barbeque) and more Japanese ingredients (slivers of toasted nori in lieu of the lettuce) to differentiate the burgers.  

Dive into the mac & cheese ($15.80) upon arrival as it’s so gooey and rich when it’s hot out of the oven. Diced bell pepper, onion, and bacon are mixed throughout to give it interest (shrimp and scallops are also available, we eliminated these to accommodate an allergy). I didn’t expect an izakaya to make such a stellar pasta, but this rivaled many Southern joints.

The bulgogi tacos ($18.80 for 3; extra piece for $5.90) were large and filling but missed the mark. Firstly, the beef was the ground variety rather than shaved, which detracts from the bulgogi feel of the dish. Moreover, the menu mentions a host of toppings - lettuce, onion, fresh jalapeño, kimchi, Japanese beni shoga, garlic mayonnaise, spicy salsa, and furikake – but really what stood out the most was just a lot of mayo. Being a heavier taco, it really could have benefited from kimchi (mine contained none) and a fresher element like green onion.

If anything, a crispy pork belly ($12.50) taco would be a tastier dish. On its own, the slices of deep-fried braised pork belly were melt-in-your-mouth good but would benefit from a crispier crust to give the dish more contrast. It’s served with a generous squeeze of seaweed paste, which looks amazing but doesn’t offer much flavour, along with fresh scallions. They’re tasty to munch on but a couple of slices wrapped in a soft tortilla with a mango slaw and a stronger condiment would be incredible.

While izakaya’s are about sharing, if you’re a hands-off-my-food type of person the aburi salmon donburi ($16.80) would be the ideal choice for a single person. The small bowl of sushi rice was topped with a generous portion of diced seared salmon, aburi sauce (a mayonnaise-based condiment), shredded salad greens, red onions, and a raw egg yolk. It was flavourful and works as a complete meal for one.

But truthfully, most of the fun about visiting an izakaya is going with a larger group and letting go of niceties and just allowing yourself to be boisterous. At an izakaya, sharing is caring.

Shunoko (Toronto)


Shunoko reminds me of Shoushin, before it was awarded a Michelin star and their tasting menus now start at $330. The restaurant quietly opened in the spring and was relatively unknown unless you’ve visited their previous location at Yonge and St. Clair. It’s helmed by Chef Jun Kim whose father and uncle both owned sushi restaurants in Korea.

While Shunoko offers an a la carte menu, it’s their omakase that drew my interest. The promise of twelve pieces of sushi, four “tastings”, and a dessert for only $100 seemed too good to be true. I arrived with lowered expectations and was blown away by the experience.

Best yet, there’s also a $30 wine pairing that’s an appealing contrast to the traditional sake pairings. Chef Jun notes that he likes wine, especially natural ones, and prefers its subtle flavours when paired with sushi. He likes to just crack open bottles with friends, while eating sushi, and see what works. Up first, a flute of light dry cava from Barcelona, a classic wine to pair with fish.

The meal started with a cube of cold tofu topped with spot prawn and ikura (salmon fish roe). I’ve never been a fan of the texture of raw shrimp. Shunoko’s was still a bit gummy, although less so than some establishments, but could be even better if it was quickly poached. The combination of briny ikura and soy was also a tad salty, working well with plain tofu but detracts from the shrimp’s sweetness.

Luckily, the following sea bream with ginger dressing was a hit. The sauce reminds me of the concoction used on salads, excepts less vinegary and having a thicker purée consistency. It goes so nicely with the slices of meaty fish, giving it a warm feeling, even though the dish was served cool – you must taste it to understand. The bits of chives rounded it off so nicely.

The first nigiri of the night was fluke wrapped around sisho leaf and topped with a piece of its fin. A lovely fresh start with a bit of interest from the chewy fin piece.

It’s followed by the chicken grunt, which is the strangest tasting fish I’ve ever had. While it looks like it comes from the sea, it has the taste of chicken, especially the chewiness of its skin. There’s a gaminess to the protein that’s mellowed a bit by the chives but could use something stronger like chopped scallions and ginger. While not my favourite bite, it’s nevertheless interesting to try.

Chef Jun simply tops the sea bream with rock salt, which while simplistic changes the taste of the classic fish. It’s savoury and neutral so that you can also enjoy the warm creamy rice, that has a lovely soft consistency but could use a splash more vinegar.

The amber jack was nice and meaty and had a light spicy essence from the pepper leaf topping it. But what made this piece shine was the French cider pairing. The cider must be aged in barrels giving it an olive scent. Yet, when you drink it, there’s a mellow sweetness that finishes off so smoothly, not like the overly fruity and bubbly canned cider you’d find at the LCBO.

One of our favourite pieces of the night was the yellow tail finished with ponzu and chives. It’s perfect for the warm whether, so refreshing and bright.

If Chef Jun didn’t tell me the next piece was striped jack, I’d almost think it’s horse mackerel as there’s such a meatiness to the fish. All while still having a clean neutral finish.

It’s at this point in the meal that the restaurant seemed to be in full swing, the four tables for two and the approximate nine chairs around the sushi bar were almost at capacity. Given Shunoko offers an a la carte and two omakase menus, it’s quite the feat to juggle.

From what we could tell, Chef Jun concentrates on the omakase experience while the other sushi chef focuses on the rest. The sous chef also fills in as the sommelier, explaining what we’re drinking and how many courses it should last.

The biggest flop for me of the evening was the scallop with truffle oil. Oh, truffle oil, such a powerful seasoning that can work with neutral fatty items but overpowers the scallop until it almost tastes bitter. At least it was paired with a gewürztraminer, the wine’s slight sweetness helps to counteract some of the bitterness. It was a lovely version of the German wine, ending with a buttery finish.

Shunoko’s horse mackerel was so refreshingly clean that it’s a testament to Chef Jun’s expertise. He knows how to prepare and neutralize a cut that can sometimes be so overly fishy.

The following Portuguese sardine was a tad gamier, but when paired with onion helped to ensure any fishiness was offset. Surprisingly, the fish was delicate, perhaps it’s because I’m normally familiar with the packed canned variety. This was paired with a French sparkling rosé, a lovely summery wine to finish the tasting.

Oddly, it was the blue fin tuna that had a gaminess, for what is normally a crowd-pleasing piece. I’m wondering if the chef mistakenly called the cherry salmon, which was listed on the board, tuna instead as this really didn’t taste that much like blue fin to us. If it were salmon, it would make more sense, like a concentrated slice of the fish.

I thoroughly enjoyed the bonito that had such a different creamy finish than most establishments. The lightly smoked fish was topped with ponzu and daikon for a bit of freshness.

Another “first taste” of fish for me of the night (aside from the chicken grunt) was the phantom fish. Despite looking like a traditional white fish, it’s rich in taste – almost like a mackerel and bonito morphed into one – so was aptly adorned with shallot to give it a punch. It’s a fascinating fish as it emits a taste that reminded me of the ocean. Let me know if you try this and feel the same.

Finally, something that actually tastes like blue fin tuna, this piece consisting of the belly cut with more chopped tuna on top! Finished with a light floral shisho flower and rock salt, this was another favourite of the evening.

Shunoko’s miso soup must be made with a fish bone broth as there it’s creamy, rich, and has a slight oiliness. Whatever it’s made with, it’s delicious and hearty, even containing some crispy napa cabbage.

Usually, when the soup is served, the meal finishes and turns to dessert. At this point, Chef Jun comes over to ask if we’d still have room for a hand roll. While I was getting full, how do you turn down another taste? He ended up presenting us with a hefty roll filled with sea bream (?), marinated mushrooms, and sisho leaf so there were so many flavours wrapped into one crispy shell.

Imagine our surprise, when the nigiri procession continued with the last piece – a tamago taco. If you’re worried about leaving the restaurant hungry (I’ll admit, my husband and I usually get something from McDonalds after some omakase meals), it won’t happen here. Shunoko’s tamago was three slices wrapped around rice. It was slightly too cold for my taste, but with its sweetness perhaps its meant to be enjoyed like a custard dessert.

Only, we were presented with actual dessert: a rich coconutty taro ice cream. It’s so creamy and delicious that I thought they would have made it in-house, but we’re advised it’s purchased from a third-party. Boy, would I like to get my hands on a take-home pint. There’s a lovely, toasted taste to the ice cream, perhaps it mixes in crispy coconut chips?

If the above sounds like too hefty a meal, Shunoko offers a “Nigiri 10” menu, which consists of ten pieces of sushi (essentially ten of the pieces that is part of their omakase menu), tamago, and miso soup for less ($67 during our dinner). Best yet, this menu doesn’t require pre-ordering with reservations, so if you find yourself walking by Shunoko and have a hankering for good sushi, you can walk-in and enjoy.

Kappo Sato (Toronto)


Have a glance at Toronto’s Michelin list and you’ll find a host of Japanese restaurants earning stars, including Sushi Masaki Saito who claimed the city’s only two-star ranking. Give it a year or two, but I sense the newly opened Kappo Sato will join the list as well.

Like the other contenders, Kappo Sato serves an omakase menu offered at two price points, $260 and $320, the later includes an additional sashimi platter and sake steamed fish. Both courses, while delicious, weren’t the highlight of my meal, so if you have a dainty appetite the $260 option will leave you satisfied.

With sixteen courses, the $320 omakase left me pleasantly full. To start, pieces of skinless fried eggplant that were nice and creamy. Although, it would be even better served warm, especially when topped with cold uni and caviar. Paired with cubes of sweet poached lobster, the “small” seasonal dish was wonderfully decadent, just a taste of the things to come.

More uni followed in the appetizer platter. In this case, the sea urchin mixed with yuba or thin sheets of soy that’s formed in the tofu making process. The two are a good combination, the silkiness of the tofu skin glides across the tongue capturing the flavourful savoury gelee while mixed with the creamy uni. The wasabi adds a spike of spice that’s surprisingly powerful for the miniscule portion of the condiment.

The cool yuba complimented the hot fried tile fish, a bite of meaty whitefish with crunchy deep-fried scales. The fish is cooled down with grated radish and a carefully split snap pea garnishes the dish for colour.

Sato’s sashimi course is very different, the fish adorned with other ingredients rather than leaving the seafood plain. The sea eel was topped with plum paste and tangy sisho flower and the lean 10-day aged tuna with Japanese mountain yam and egg yolk. Some of it works - like the plum paste and sisho flower – adding a refreshing element to the fish, others don’t - like the whipped mountain yam and egg yolk – creating something with the consistency of slime.

The nyumen or soup course features a bowl of dashi filled with silky delicious somen noodles. The slice of sea bream was good, but I found its softness too close to the texture of the noodles and would have liked a protein that had some bite or crunch.

We’re told what makes kappo cooking different is that the chef cooks in front you, rather than preparing ingredients in a behind-the-scenes kitchen and merely assembling dishes at the counter. The tempura course highlights the concept best as each of the three items were individually fried and presented.

Three condiments - lemon, salt, and ponzu – provides flavour to the tempura. Don’t worry, you’ll be given instructions on what to use with each item. We’re told to use the lemon and salt for half of the sweet young swordfish and then the ponzu for the second half. They should be more specific on which side of the fish to use each on as the ponzu would have better masked the slight bitterness of the head, while the lemon and salt would let the freshness of the body and tail portion shine. Sadly, I swapped the two.  

Seasonal vegetables of asparagus and fava beans follow, both just cooked through and paired nicely with the ponzu.  

Yet it’s the finisher that really excites, a meaty raw-in-the-middle scallop wrapped in sisho leaf that’s sweet and fragrant. It does need to be drained longer so the batter remains crispy, and I’d suggest sprinkling the salt on (rather than dipping the scallop into the salt) to avoid having it slide out of the tempura coating.

Kappo Sato sets up the meal with a host of video worthy shots, the first being the broiled smoked dish where a gleaming dome was filled with smoke and the cover removed table side. Despite all the fume, the flavours just singed the fish with a smoky essence, the centre of bonito and tuna still tasted neutral.

We’re told the tuna is a lean variety, but it’s so nicely marbled that it can match any otoro, flooding my mouth with a sweet richness. Crispy arrow root chips are given to help cleanse the palette but could easily make for an addictive tv-side snack.

Like the sashimi, Sato’s sushi were beautiful flavourful bites, the bluefish topped with shallot, scallion, and wasabi with the rice nicely warmed. Personally, I would tone down shallot as it was a tad pungent for the fish, nonetheless it was still tasty.

The saba hand roll was served taco style, the rice and fish sandwiched between sisho and crispy seaweed. Another inventively flavourful dish that’s different from what you’d normally receive. It’d be even better if there was a bit of glaze put onto the mackerel.

Sitting in a sweetened vinegar, the mozuku seaweed was silky and reminded me of fat choi but milder and more delicate. It made for a refreshing palette cleanser before the richer grilled unagi, which was lightly brushed with a sweet and savoury glaze. Slightly crispy around the edges, the freshwater eel went nicely with the sansho pepper leaf and wasabi.

If there was any alcohol used in the sake-steamed red snapper it must have evaporated in the cooking process as there wasn’t much flavour to the fish and napa cabbage. Hence, the dish really relied on the house-made ponzu dipping sauce. I like the concept of the dish, but it could have been pulled out of the oven earlier as the fish was a tad overdone.

Two types of tofu follow, the first featured in the cold dish and made with sesame so it had a rich nutty essence. The addition of Sakura, mushroom, and dried shrimp makes for a fragrant bite, although I did find the dried shrimp a bit overpowering with the tofu.  

The second traditional soy tofu sat under a mound of lightly cooked wagyu in a beef consommé. I normally love wagyu but being poached in broth doesn’t do it justice as everything merely tastes oily. My friend described it best as saying it’s like having a non-crispy bacon soup. Should they want to keep it in slices, rolling the beef around asparagus, enoki, or white chives would have been a better choice.



I kept eyeing the copper domes sitting on cooking elements by our counter. Its contents were finally revealed in our last savoury course as the seafood pot-cooked rice. Just close your eyes and inhale as the cover is lifted as the sweet seafood aroma of cooked crustaceans is so intoxicating.

Cooked with dashi the sticky rice became fluffy but still firm, almost like a drier risotto. Studded with clams, rehydrated shrimp, and fish the rice was already teeming with seafood essence but made even richer with a generous portion of ikura (salmon roe). At Kappo Sato you won’t leave hungry because a second helping of rice is available and offered. This was all washed down with a hot mild miso soup.

Just save room for dessert as all three courses were delicious. Firstly, a slice of musk melon that’s so sweet and refreshing. Its sweetness is contrasted by a glass of hot tea that’s so wonderful to sip on after a filling meal.

All the while, an ice cream machine sits on the counter whirling around and holding the second dessert, a freshly made soymilk ice cream. The cold soft serve was paired with azuki bean paste and a matcha shortbread cookie. While there’s a light sweetness to the dish, we’re given a tiny vessel of brown sugar syrup to add to the soymilk dessert to our liking. Use it, I love how it enhanced the bean and ice cream’s flavours.

To end, a strawberry daifuku that’s a mound of azuki with sweet strawberry pieces topped with a delicate sheet of soft mochi. Savour the single kuromame, a sweet black soybean, topping to daifuku that breaks apart to reveal a smooth beany centre. It’s served with another matcha tea, this time light and frothy so there’s a latte quality to the drink minus the dairy.

Aside from his culinary training, Chef Takeshi Sato achieved other accomplishments including being a sake sommelier and qualified to prepare a Japanese tea ceremony – hence the final two cups of matcha served with dessert. He jokingly says he loves drinking, another common theme that seems to run through the upscale Japanese chefs of Toronto.

Chef Sato leads an all-female kitchen brigade who artfully creates and plates the dishes. Takeshi has decades of cooking experience from working in a Michelin restaurant in Tokyo, helming Toronto’s Zen restaurant, and most recently being the official chef of the Japanese Consulate General in Toronto. Now it’s his turn to be an owner of a restaurant in his name, when will his star come?
